The wheatgrass plant comes from the family of Poaceae; barley, oats and rye all come from the same family. Wheatgrass spouts from the seeds of wheat and it is harvested after 7 to 10 days of its plantation. To get the wheatgrass juice it is squeezed by a specially designed juicer.
Why wheatgrass is so nutritious? Wheatgrass is harvested at the jointing stage, this is a stage where the supply of vitamins, proteins, enzymes and chlorophyll is maximum. After jointing stage its nutritional value diminishes. This is the reason why, when you consume one ounce of wheatgrass juice you get nutritional value equal to 2 pounds of leafy vegetables.
